Chef Carlos Gaytán
, the first Mexican to be awarded a Michelin star, presented a menu for his new restaurant , Tzuco , that will open in Chicago during the fall.
The presentation took place on May 6 at Moxi restaurant , located inside hotel Matilda, in San Miguel de Allende , Guanajuato.
Tzuco will pay homage to his hometown Huitzuco, Guerrero . Chef Gaytán looks to take traditional Mexican food , with a French touch, to Chicago but says he will emphasize Mexican flavors.
The Mexican restaurant will also be an incredible opportunity for others, as Gaytán will take young Mexican chefs to work at his Chicago restaurant , “we are (taking) a very talented group, from investors to chefs ,” he said.
Also, the design, furniture, and products such as cheese, bread, and wine will be Mexican: “it is a totally Mexican project in the United States ,” the chef explained.
Juan Carlos Gaytán
was born in 1970 in Huitzuco , Guerrero . In the 1990s, he migrated to the United States , where he worked as a dishwasher at the Sheraton Milwaukee North Shore hotel , he then became a cook .
By 2004, he was an executive chef at Bistrot Margot , where he learned from chef Dominique Tougne .
In 2008, he opened Mexique and was awarded a Michelin star in 2013 and another one in 2014 and after 10 years of hard work, it closed in 2018 because Gaytán wanted to focus on other projects.
In 2018, Gaytán opened Há , a restaurant located inside the Xcaret hotel .
